Blogmas Day 9: Rengoku Chai Recipe

Hello Sunny Siders, we’re back for Blogmas day 9. Today, I’ve got another recipe and it’s a Chai recipe inspired by my Hashira coffee drawing.

Ingredients:

  • Chai blend
  • Blood oranges
  • Milk
  • Heavy cream
  • Cinnamon

Blood Orange Syrup:

  • 2 C white sugar
  • 1 C water
  • 2 lbs of blood oranges, zested and squeezed
  • 2 Cinnamon sticks

Directions

  • Slice a blood oranges thinly and dehydrate in air fryer for 6 hours at 150 degrees Fahrenheit.
  • Zest and juice 2 lbs of blood oranges.
  • Combine white sugar, water, orange zest and juice in a saucepan over low to medium low heat.
  • Add in cinnamon sticks and occasionally stir until syrup reaches desired consistency. Let cool completely.
  • In a saucepan add 8 oz of water and bring to a boil. Add one teaspoon of chai blend and stir until steeped.
  • Turn off heat and stream in milk until chai reaches desired color and creaminess.
  • Strain chai into cup to remove any loose tea. Add in desired about of blood oranges syrup.
  • Froth 3 T of heavy cream with a tiny bit of blood oranges syrup until thick and foamy. Slowly pour over top of chai.
  • Garnish with dried blood orange and cinnamon stick!

Blogmas Day 3: DIY Gift Ideas

Hello Sunny Siders, happy Blogmas day 3! Gift giving can be so stressful and expensive this time of year. It sometimes feels virtually impossible to balance showing your friends and family you care while also staying on budget. That is why this year I thought it’d be fun to share some DIY more affordable gift ideas to help make that balance more feasible!

DIY Gift Ideas

Handmade cards/card boxes – Not only to people love receiving cards, but having a stock of cards on hand for the year to come is so helpful. Design, print, or draw greeting cards for various holidays throughout the year and package them in a box to serve as a stock for the person you are gifting to!

Personalized drawings (thrift a picture frame for an added touch) – If you are in to art, drawing something meaningful to the person you are gifting is a great option. I have done this for birthdays and holidays in years past, and it is even more fun when you find a nice picture frame to elevate it.

Handwritten letters (thrift a picture frame for an added touch) – As simple as it sounds, write a nice letter to someone you love. You can jazz it up with thick paper or even a nice frame.

Coupon book – Make coupons of things/experiences your person can cash in when they want at a later time. This could be for simple things like a movie night at home, breakfast in bed, or even something fancier like an evening night out at their favorite restaurant.

Write a poem – My Grandma has been doing this for years as birthday gifts and trust me when I say people are more excited and appreciative of her poems than anything else they are gifted. I have witnessed first hand my aunts and uncles sob tears of joy reading her poems. Truly, a great and meaningful gift idea.

Themed dinner night at home – Don’t have the means to go out? Not a problem! Make a themed meal at home. This can be tied to their favorite cuisine or even a book or show they enjoy. Set the table and plate it up like you are one of those master chefs!

Cook a loved one their favorite meal – If theming seems too much, simply cooking someone’s favorite meal is sure to be appreciated. I know anytime I get to savor my mom’s homemade Mac n Cheese or my Grandmas pierogis it makes me feel so nostalgic and at peace.

Handmade baked goods box – If you enjoy baking, this is a perfect time to bake some treats and pack them up in a festive tin. Expanding on this you could do themed boxes to breads, adding homemade jams to the box. Or, make a coffee themed box, with homemade syrups and coffee grounds.

Scrapbook/dump journal – Turn those memories you’ve made into a scrapbook that your person can look back on when they need a smile. I did this for my friend when we graduated High School, for my fiancé when we had been dating for a year, and for my Grandma’s birthday. Something simpler would be to keep hold of little things like concert tickets, movie tickets, and other little paper goods from events or experiences you’ve attended with that person and turn it into a dump journal.

Personalized photo calendar – My family has been doing photo calendars for as long as I can remember. We used to do it as our entire extended family, and I would get so excited seeing what photos made the cut. Now, I make one for my parents and my brother every year focused on our family.

Family recipe book – I received one of these for my High School graduation and to this day it is still one of my most used gifts. My mom asked family members and friends to share the recipes for my favorite treats they make and compiled it into a book. Now, whenever I am craving comfort food from my childhood, I can open the recipe book and get cooking!

Bracelets – Grab some beads and string and make some bracelets. I love making bracelets focused on words of the year. A few years ago there was a trend to get beads that look like your eye color and that of your family, and I had a blast making those too!

Thankful jar – I have been doing a thankful jar for the past 4 years and I think gifting someone one would make a great gift. Take any jar, I used an old peanut butter jar that I washed, and decorate it. Include a pack of sticky notes along with it. The goal is to write one thing you are thankful for each week and put it in the jar. At the end of the year you have 52 memories to make you smile.

Blogmas Day 20: What Recipes I Actually Tried This Holiday Season

Hello Sunny Siders, happy Blogmas day 20! Today I wanted to look back on the recipes I wanted to try and share the ones I actually have tried so far! There’s still time for me to make more of these before the new year begins, but I wanted to give an update on my progress so far!

Rudolph Spritzer

I have not made this just yet, we usually reserve Rudolph Spritzer for Christmas morning and I intend to make it then!

Cinnamon Rolls

I did make these already at Thanksgiving and I am planning to make them for breakfast on Christmas morning as well!

Cranberry Brie Bites

I have not made these yet and I am expecting that I won’t be getting around to them this year. I don’t really want to make them for myself and it’s not really an appetizer people in my family will enjoy.

Hot Chocolate with Whipped Cream

I made this the night after I posted the recipe blog ideas! I had heavy cream and decided to make my own homemade whipped cream. It was delicious!

Christmas Cookie

While not exactly a festive cookie, I did make my favorite brown butter chocolate chip cookies and have been snacking on them all month!

English Toffee

I haven’t gotten around to making this yet, and seeing as how my mom made some and brought it for me, I probably will be skipping this recipe as well

Sugar Cookie Latte

I did make myself a sugar cookie inspired latte. It still doesn’t taste like the Pillsbury take and bakes, but I’m getting closer!

Lasagna Soup

I made this for meal prep this week and it was fantastic! I got fresh lasagna noodles and sausage from an Italian deli near me and that really elevated this dish.

Meatloaf

I did make meatloaf and I’m so proud of myself! This was certainly out of my comfort zone, but I’m so glad I pushed myself to make it!

Blogmas Day 12: Favorite Holiday Drinks

Hello Sunny Siders! Today I’m sharing some of my favorite holiday beverages!

Rudolph Spritzer

I know I’ve already talked about this one before but I love Rudolph Spritzer! It’s essentially orange juice, sprite, and grenadine!

Hot Chocolate

Again, another classic for this time of year that I love. I really enjoy making hot chocolate with chocolate shavings rather than the premade mix! Also fresh whipped cream really elevates it!

Peppermint Mocha

I really enjoy a peppermint mocha this time of year. So cozy, festive, and delicious!

Coquito

I recently had the chance to try an alcohol free version of coquito that my coworker made and it was amazing! It’s a coconut based creamy beverage with cinnamon and other spices that originated in Puerto Rico!

Cranberry Soda

I know this is silly but I love me a cranberry flavored soda! It can be sprite cranberry or the prebiotic soda Poppi, either one I enjoy so very much this time of year.

I thought I’d have more holiday beverages to share with you all, but I’m realizing my list is much shorter than I thought! Regardless, I love a festive beverage! It really gets me in the spirit of the season!

Blogmas Day 5: Recipes I Want to Try This Holiday Season

Hey Sunny Siders, happy Blogmas day 5! Today I wanted to share some holiday recipes that I’d like to try this season! I’ve got no idea if I’ll actually get around to making all of these, but I’m putting it here on the blog to serve as the boost of encouragement I need to give these a try!

Rudolph Spritzer

This is my absolute favorite holiday beverage! Even now as an adult and I can have alcoholic beverages like homemade eggnog and Bailey’s, I will choose Rudolph Spritzer any day! It’s essentially orange juice, lemon lime soda, and grenadine. You bet if there’s anything on this list I end up making it’ll be this!

Cinnamon Rolls

A timeless classic for my family has always been homemade cinnamon rolls on Thanksgiving and Christmas morning. I already checked off cinnamon rolls on Thanksgiving, now I just need to do it again for Christmas! We use my grandma’s recipe and they are by far the most superior cinnamon rolls on the planet. Nothing compares to one fresh out of the oven with butter on top, it’s so good!

Cranberry Brie Bites

I just saw these in a video I was watching and they sounded delicious! It’s a toasted baguette with cranberry sauce, brie, and rosemary. I think this would be a fun appetizer to make or just a snack for myself one night!

Hot Chocolate with Whipped Cream

Nothing screams winter like a warm cup of hot chocolate with whipped cream! I want to make some with fresh whipped cream as well this year!

Christmas Cookie

I’m not sure what kind of cookies I want to make this year, but I know I want to bake at least one new cookie recipe! Baking has been a super fun hobby of mine in 2024 and I want to round the year out strong with a delicious dessert for the holiday!

English Toffee

One recipe we always make at this time of year is toffee and I’d like to try my hand and making it myself this year! Candy making is definitely not something I even know where to start with, but I’d love to give it a try for fun!

Sugar Cookie Latte

I’ve been trying for a few years to make a latte that tastes like the Pillsbury sugar cookies and this year I’m going to continue that quest! One day I will figure this out and have a delicious beverage inspired by my favorite take and bake cookies!

Lasagna Soup

My co worker sent me a recipe for lasagna soup and I’d definitely love to give that a try this winter. This is the perfect time of year for soup and I will be taking advantage of the season to try many soup recipes!

Meatloaf

I’ve never made meatloaf myself before but I think I want to give it a try as a meal prep dinner in the coming weeks!

That’s all the recipes off the top of my head that I’d like to try this holiday season. I think I’ll do a follow up blog regarding which recipes I actually end up making to keep myself accountable to trying these out!

Stuffed Bell Pepper Recipe

Hey Sunny Siders, today I wanted to share one of my favorite dinner recipes. Stuffed bell peppers are such an easy meal prep and are great for a busy week.

Ingredients

• 6 Bell Peppers

• 1 Package of Ground Chicken

• 2 C Uncookeed Rice

• 1 Medium Onion

• 4 Cloves of Garlic

• 1 Can of Tomato Paste

• Parmesan Cheese

• 4 Cheese Blend

• Mozzarella Cheese

• Salt

• Pepper

• Onion Powder

• Italian Seasoning

• Paprika

Directions

  1. Preheat Oven to 350°F
  2. Start cooking 2 C of rice in a rice cooker
  3. While rice is cooking, dice onion, grate garlic, and cut the tops off and remove insides of the peppers
  4. Sauté onion over medium heat until translucent, then add garlic stirring until fragrant
  5. Add in ground chicken, salt, pepper, paprika, onion powder, and Italian seasoning cooking thoroughly,
  6. Then add in tomato paste and cooked rice until combined
  7. Turn off heat and add in a generous amount of Parmesan and 4 cheese blends until gooey and melted
  8. Spoon mixture into hollowed out bell peppers and top with mozzarella cheese
  9. Baked covered with aluminum foil for 30 minutes and then remove foil and broil until cheese is bubbling and golden

Banana Bread Protein Muffins

Hey Sunny Siders, it’s been so long since I’ve shared a recipe with you guys, but today we are changing that and I’m technically sharing two recipes in one!

As one does when they have a surplus of overly ripe bananas they make banana bread! I used one base recipe and altered the fixings based on what I wanted. Today I’ll be sharing cinnamon walnut banana bread muffins and dark chocolate chip banana bread muffins.

Banana Bread Muffins Batter

5 ripe bananas

2 C All purpose flour

3/4 C vanilla protein powder

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/4 C granulated sugar

1/4 C brown sugar

1/4 C unsalted butter, melted

2 large eggs

1 tsp vanilla paste (vanilla extract works too)

1/2 C sour cream

Cinnamon Walnut Banana Bread Muffin

1/2 C chopped walnuts

Oatmeal Topping

1/4 C rolled oats

1 T sugar

1 T cinnamon

Dark Chocolate Chip Banana Bread Muffins

1/2 C dark chocolate chips

Directions

Preheat oven to 350°F

Whisk together all the dry ingredients (flour, baking soda, baking powder, protein powder, salt, cinnamon)

In a separate bowl combine bananas, eggs, both sugars, vanilla paste, butter, and sour cream until homogenized.

Slowly add dry ingredients to wet ingredients until fully incorporated.

At this step either fold in walnuts or chocolate chips.

Line muffin tray with cupcake liners and evenly scoop batter into trays.

For cinnamon banana bread muffins, mix together sugar, cinnamon, and oats. Then sprinkle overtop the muffins.

Bake muffins at 350°F for 25-30 minutes or until a toothpick comes out clean.

Wait to cooldown and then enjoy!

Making the Easiest Christmas Cookie Bars (Blogmas Day 12)

Hey Sunny Siders, today I’m sharing a holiday recipe that is so simple even novice bakers can make them. This recipe is a basic almond shortbread cookie with sprinkled topped with cream cheese frosting.

I wanted to make cookies while visiting my boyfriend and he lacked all the following basic baking tools: mixing bowls, measuring spoons, measuring cups, and a hand mixer. Still, we were able to make these cookie bars substituting in a rice cooker bowl for the mixing bowl and using a liquid measuring cup for all ingredients. We mixed everything with a spatula or by hand and they still turned out delicious, so you really can make these with next to no baking equipment.

Cookie Ingredients

1/2 C butter (softened)

1 C sugar

1 large egg

1 tsp vanilla extract

1/8 tsp almond extract

1/4 tsp salt

2 C flour

1 tsp baking powder

1/4 C holiday sprinkles (we didn’t have any so feel free to use any sprinkles you like)

Frosting Ingredients

1/2 C butter softened

8 oz cream cheese softened

1 tsp vanilla extract

1/4 tsp salt

1.5 C powdered sugar

Directions

Preheat oven to 325°F. In a mixing bowl, combine butter, sugar, and egg until homogeneous. Add salt, almond extract, and vanilla extract and stir to incorporate. Slowly add in 2 C flour and baking powder until dough is full mixed. Once dough is mixed, then add in sprinkles. Place dough into a parchment lined pan and press out until even and smooth. Bake for 15-20 mins until dough is golden brown but still soft. Allow to cool completely.

While cookie bars are cooling, add the softened cream cheese, butter, vanilla extract, and salt to a bowl and mix together. Once combined, slowly add in 1.5 C of powdered sugar until a thick, smooth frosting is formed.

When cookie bars are cooled, spread frosting overtop and add finish off with sprinkles. Cut into bars and enjoy.

Fall Gnocchi Sheet Pan Bake

Hey Sunny Siders, I’m popping off with another fall recipe! Y’all are getting spoiled because it’s my favorite season of the year for everything: food, fashion, decor, weather, ambiance, holidays… I could go on forever, but we have a recipe to get to! This recipe is loosely inspired by kalememaybe on Instagram video here.

Ingredients

1 package gnocchi (I used potato gnocchi, but any kind will work)

1 red onion, sliced

5 cloves of garlic, minced

1 package sausage (I used hot italian sausage, but any kind will work)

1 package of mushrooms

1 handful of fresh sage leaves, finely chopped

1 4 oz tube of goat cheese

1 package of arugula

Drizzle of olive oil

Salt to taste

Pepper to taste

Directions

Preheat the over to 450°F

Start by removing the casing from the sausage and breaking into bite sized chunks. In a pan, brown the sausage on medium-high heat.

Line a baking sheet with parchment paper and add: gnocchi, mushrooms, onion, sage, and garlic

Once sausage is browned, add to baking tray. Drizzle everything with olive oil, and season with salt and pepper to taste.

Use a wooden spoon to mix everything together and bake for 30 minutes until sausage and gnocchi are cooked, stirring half way.

Once finished baking, sprinkle with goat cheese and give everything a generous mix.

To plate, add a bed of arugula and top with the gnocchi sausage bake. Enjoy!

Homemade Pumpkin Cream Cold Brew

Hey Sunny Siders, today I’m sharing my favorite fall coffee recipe! I’ve always loved the Starbucks Pumpkin Cream Cold Brew, but felt like I could make it myself and save some money! I’ve been playing around and this is currently my favorite way to have my favorite fall coffee on a budget!

Ingredients

0.45 g coffee grounds

1 tsp pumpkin pie spice

1 C heavy whipping cream

1/2 T pumpkin pureee

1 T vanilla syrup + 1 tsp of pumpkin pie spice

Directions

Add 0.45 g coffee grounds and 1 tsp of pumpkin pie spice to 1 cup of water. Stir and let sit in fridge for at least 8 hours (overnight preferred)

Add heavy whipping cream, pumpkin purée, vanilla syrup, and pumpkin pie spice to a mason jar. Shake thoroughly until all ingredients are combined and cream becomes frothy and viscous.

Add cold brew coffee to a glass and top with desired amount of foam.

Sprinkle with more pumpkin pie spice and enjoy!
