Blogmas Day 7: The Best Chocolate Chip Cookie Recipe I’ve Ever Had

Hello Sunny Siders, happy Blogmas day 7! Today, I am sharing the BEST chocolate chip cookies recipe I’ve ever tried making and I want you all to be able to experience the magic of these cookies.

These are brown butter chocolate chip cookies that I have adapted slightly from a recipe @/samanttha_chen shared on instagram!

Ingredients:

1 C unsalted butter

2.5 C all purpose flour

1 T cornstarch

1 tsp baking soda

1 tsp salt

1 C brown sugar

3/4 C white sugar

1 egg

1 egg yolk

1 T heavy cream

1 T vanilla extract

Mix of dark chocolate and semi sweet chocolate chips/chunks to your liking

Optional: toasted crushed walnuts or pecans to your liking

Directions:

Preheat the oven to 350 degrees Fahrenheit.

Take the cup of butter and heat in a saucepan on medium/low heat until the butter turns golden and brown (it should smell nice and toasted)

Remove butter from saucepan and chill in the freezer for 10 minutes to cool down

Combine flour, cornstarch, baking soda and salt together in a bowl and set aside.

Beat together butter and both sugars until light and fluffy.

Add in the egg, egg yolk, heavy cream, and vanilla.

Slowly add dry mixture to the wet mixture and mix, then fold in chocolate and nuts.

Bake cookies for 12-14 minutes to desired doneness.

Should make about 2 dozen cookies.

Neiman Marcus Cookies (Blogmas Day 22)

Hey Sunny Siders and happy blogmas day 22! Today, I’m sharing one of my favorite cookie recipes of all time. I look forward to these cookies each and every year.

Ingredients:

• 2 C flour

• 2.5 C oatmeal, pulsed into flour

• 1 tsp baking soda

• 1 tsp baking powder

• 1/2 tsp salt

• 2 sticks of butter

• 1 C white sugar

• 1 C brown sugar

• 1 tsp vanilla

• 2 eggs

• 1.5 C crushed pecans

• 4 oz chopped hershey’s bar

• 1.5 C chocolate chips

1. Cream together both sugars and butter, then add in eggs and vanilla.

2. Slowly add in flour, oatmeal, salt, baking soda, and baking powder.

3. Add in crushed pecans and chocolate bar, then fold in chocolate chips.

4. Portion out dough and bake at 375°F for 10-15 mins until golden brown.

Dairy Free Dark Chocolate Cranberry Shortbread Cookies

Hey Sunny Siders, today I’m sharing this delicious shortbread cookie recipe that is perfect for the holiday season.

Ingredients:

• 1 C Margarine
• 1/2 C Sugar
• 1/2 tsp Almond Extract
• 2 C Flour
• 1/4 C Cornstarch
• 1/2 C Chopped Dried Cranberries
• 1/4 C Mini Dairy Free Chocolate Chips

Chocolate Drizzle:

• Coconut Oil and Dairy Free Dark Chocolate Chips

Directions:

1) Mix Margarine, sugar, and almond extract
2) Gradually Fold in Flour and Cornstarch
3) Mix in cranberries and chocolate by hand
4) Form into balls, or roll and use cookie cutters to shape dough
5) Bake at 300 Degrees Fahrenheit for 20-30 mins
6) Once cooled, drizzle chocolate overtop

Dairy Free Peanut Butter Blossoms

Hey Sunny Siders, I’m back with a spin of my favorite holiday cookie recipe. These dairy free peanut butter blossoms are sure to knock your socks off.

Ingredients:

• 1/2 C Margarine

• 1/2 C Crunchy Peanut Butter (Crazy Richard’s Peanut Butter)

• 1/2 C Swerve Granular Sugar replacement

• 1/2 C Coconut Sugar

• 1 Egg

• 1 tsp Vanilla

• 1 & 3/4 C Flour

• 1 tsp Baking Soda

• 1/2 tsp Salt

• Dairy Free Chocolate Chunks

Directions:

1) Preheat oven to 350 degrees Fahrenheit

2) Cream margarine, peanut butter, and both sugars

3) Add in egg and vanilla until we’ll combined

4) Fold in flour, baking soda, and salt

5) Roll into balls and coat in sugar

6) Bake for 6 minutes before topping with dairy free chocolate chips and baking for another 3-5 minutes

Cookie Dough Baked Goatmeal

Hey Sunny Siders, I’m back with another killer baked goatmeal recipe. This one is inspired by cookie dough, and it seriously is one of the most delicious recipes I’ve ever created!

Ingredients

• 1/2 C Rolled Oats

• 1 Scoop Vanilla Protein Powder

• 2/3 C Almond Milk

• 1/2 Frozen Banana

• 1 tsp Baking Powder

• 1 tsp Vanilla Extract

• 1/2 tsp Cinnamon

• Pinch of Salt

• 1 T Dairy Free Chocolate Chips

~ Topped with @crazyrichardspb Cashew Butter ~

Directions:

1) Preheat oven to 400 degrees Fahrenheit

2) In a blender comvine, oats, banana, protein powder, baking powder, vanilla extract, cinnamon, almond milk, and salt

3) Pour into baking safe dish and fold in 1 T of dairy free chocolate chips

4) Bake for 22 minutes and top with cashew butter

5) Enjoy!

Hey Sunny Siders, and welcome to another Workout Wednesday! Today I’m bringing you a cookies and creme protein shake that makes you feel like you’re having dessert instead of a protein shake!

Ingredients:

• 8 oz Almond Milk

• 1 Frozen Banana

• 1 Scoop Vanilla Protein Powder

• 1 tsp Vanilla Extract

• 1 tsp Vanilla Pudding

Chocolate Cookie Dough

• 1/4 C Peanut Butter

• 1.5 T Maple Syrup

• 1 tsp Vanilla Extract

• 1/4 C Oat Flour

• 1 Scoop Chocolate Protein Powder

• 1/2 tsp Salt

Directions:

1) Add Oat Flour, Protein Powder, Peanut Butter, salt, maple syrup, and vanilla extract to a bowl.

2) Mix thoroughly until a dough forms, adding almond milk as needed.

3) To a blender, add almond milk, banana, protein powder, vanilla extract, and vanilla pudding.

4) Blend until desired thickness is achieved.

5) Top shake with a handful of protein cookie dough and enjoy!

Brookie Dough Nice Cream

Hey Sunny Siders , and welcome to another Foodie Friday! Let me just tell you, Y’ALL ARE NOT READY FOR THIS RECIPE! I swear this is the best recipe I have ever concocted, and I am beyond excited to share it with you all! I was inspired by one of my all time favorite ice creams Ben and Jerrys Half Baked, which is a vanilla and chocolate ice cream layered with cookie dough and brownie bits. This dairy free nice cream recipe is without a doubt a completely phenomenal substitute for the real deal. I am literally drooling just thinking about it!

Ingredients:

Brownie Batter
• 3 T Oat Flour
• 1 Scoop Chocolate Protein Powder
• 2 T Peanut Butter
• 1 T Cocoa Powder
• 2 1/4 tsp Maple Syrup
• 1/2 tsp Vanilla Extract
• 1/4 tsp Salt
• Splash Almond Milk (to dough consistency)

Cookie Dough
• 3 T Oat Flour
• 1 Scoop Vanilla Protein Powder
• 2 T Peanut Butter
• 1 T Dairy Free Chocolate Chips
• 2 1/4 tsp Maple Syrup
• 1/2 tsp Vanilla Extract
• 1/4 tsp Salt
• Splash Almond Milk (to dough consistency)

Vanilla Nice Cream

• 2 Frozen Bananas (sliced)

• 2 Scoops Vanilla Protein Powder

• 1 T Vanilla Pudding

• 1 tsp Vanilla Extract

• Almond Milk to desired thickness

Directions:

  1. In a bowl combine oat flour, peanut butter, cocoa powder, chocolate protein powder, vanilla extract, maple syrup, salt, and almond milk until dough forms
  2. In a separate bowl, combine oat flour, peanut butter, vanilla protein powder, vanilla extract, maple syrup, salt, and almond milk until dough forms. Then stir in chocolate chips.
  3. To a blender, add frozen bananas, vanilla protein powder, vanilla extract, and vanilla pudding. Blend on high, adding almond milk until desired consistency is achieved.
  4. Pour nice cream base into a third bowl. Then gently combine the two dough mixtures into one bowl before transferring to bowl containing nice cream base.
  5. Swirl the dough mixtures into the nice cream, then place in freezer to set.
  6. Enjoy!

Chocolate Protein Cookie Dough

Hey Sunny Siders, and welcome to another Foodie Friday! Today, I’m sharing a super easy and delicious no bake protein cookie dough with you all. This stuff is literally so delicious, and a great way to curb that sweet craving but still get some protein into your diet!

Ingredients:

• 1/2 C Peanut Butter (@crazyrichardspb)
• 3 T Maple Syrup
• 1 tsp Vanilla Extract
• 3/4 C Oat Flour
• 2 Scoops Chocolate Protein Powder
• 1/2 tsp Sea Salt

Directions:

1) Pulse oats into flour and set aside

2) In a large bowl, add peanut butter, maple syrup, and vanilla extract.

3) Add oat flour, protein powder, and sea salt to the large bowl and using a spoon mix all the ingredients together until crumbles begin to form.

4) Add dairy free milk as needed to get the desired consistency.

5) Roll into balls or leave as crumbles.

6) Enjoy!

Dairy Free Ice Cream Cookie Sandwiches

Hey Sunny Siders, and welcome to another Foodie Friday! Today I have a low-Fodmap friendly dairy and gluten free ice cream sandwich recipe. I have been craving ice cream like nobody’s business, but due to my low-Fodmap diet I currently (and maybe forever) cannot have dairy. I decided to do the next best thing and make some “nice cream” and took it up a notch by making cookie sandwiches with it!

Ingredients:

Cookie

• 1 C Rolled Oats

• 1 C Ripe Banana (mashed)

• 1/4 C Maple Syrup

• 1/2 C Peanut Butter

• 1 tsp Vanilla

• 1/4 tsp Salt

• 1/3 C Dairy Free Chocolate Chips

Ice Cream

• 3 Frozen Bananas

• 1 Scoop Vanilla Protein Powder

• 1 tsp Vanilla Pudding

• 1 tsp Vanilla Extract

• 1 tsp cinnamon

• Splash of Almond Milk

Directions:

1) Preheat the oven to 350 *F. Spray two 8×8 baking pans with cooking spray.

2) Add bananas to a blender, and blend until smooth. Add the remaining ingredients into the blender with the exception of the chocolate chips until a dough is formed.

3) Once dough is combined, fold in chocolate chips.

4) Divide cookie batter evenly into prepared baking pans and spread out. Make sure your cookie bars are as even as possible in the pan by using the back of a measuring cup to smooth the mixture down.

5) Bake for 15 minutes until edges start to brown. Remove from the oven and allow to cool completely.

6) Blend the frozen bananas and protein powder until an ice cream texture forms. Add almond milk until desired texture forms.

7) Spread your ice cream evenly on top of one of the cookie bars.

8) Remove the remaining cookie bar from the other pan and place it on top of the ice cream. Gently press the cookie bar into the nice cream.

9) Cover your 8×8 pan container with foil and place into the freezer so sandwiches will form.

10) Remove from the freezer when you are ready to serve, and slice into desired amount of bars.

11) Enjoy!

• 344.6 Calories

• 16.5 g Fat

• 46.3 g Carbohydrate

• 4.8 g Dietary Fiber

• 27.2 g Sugar

• 9.4 g Protein
