Stuffed Bell Pepper Recipe

Hey Sunny Siders, today I wanted to share one of my favorite dinner recipes. Stuffed bell peppers are such an easy meal prep and are great for a busy week.

Ingredients

• 6 Bell Peppers

• 1 Package of Ground Chicken

• 2 C Uncookeed Rice

• 1 Medium Onion

• 4 Cloves of Garlic

• 1 Can of Tomato Paste

• Parmesan Cheese

• 4 Cheese Blend

• Mozzarella Cheese

• Salt

• Pepper

• Onion Powder

• Italian Seasoning

• Paprika

Directions

  1. Preheat Oven to 350°F
  2. Start cooking 2 C of rice in a rice cooker
  3. While rice is cooking, dice onion, grate garlic, and cut the tops off and remove insides of the peppers
  4. Sauté onion over medium heat until translucent, then add garlic stirring until fragrant
  5. Add in ground chicken, salt, pepper, paprika, onion powder, and Italian seasoning cooking thoroughly,
  6. Then add in tomato paste and cooked rice until combined
  7. Turn off heat and add in a generous amount of Parmesan and 4 cheese blends until gooey and melted
  8. Spoon mixture into hollowed out bell peppers and top with mozzarella cheese
  9. Baked covered with aluminum foil for 30 minutes and then remove foil and broil until cheese is bubbling and golden

Fall Gnocchi Sheet Pan Bake

Hey Sunny Siders, I’m popping off with another fall recipe! Y’all are getting spoiled because it’s my favorite season of the year for everything: food, fashion, decor, weather, ambiance, holidays… I could go on forever, but we have a recipe to get to! This recipe is loosely inspired by kalememaybe on Instagram video here.

Ingredients

1 package gnocchi (I used potato gnocchi, but any kind will work)

1 red onion, sliced

5 cloves of garlic, minced

1 package sausage (I used hot italian sausage, but any kind will work)

1 package of mushrooms

1 handful of fresh sage leaves, finely chopped

1 4 oz tube of goat cheese

1 package of arugula

Drizzle of olive oil

Salt to taste

Pepper to taste

Directions

Preheat the over to 450°F

Start by removing the casing from the sausage and breaking into bite sized chunks. In a pan, brown the sausage on medium-high heat.

Line a baking sheet with parchment paper and add: gnocchi, mushrooms, onion, sage, and garlic

Once sausage is browned, add to baking tray. Drizzle everything with olive oil, and season with salt and pepper to taste.

Use a wooden spoon to mix everything together and bake for 30 minutes until sausage and gnocchi are cooked, stirring half way.

Once finished baking, sprinkle with goat cheese and give everything a generous mix.

To plate, add a bed of arugula and top with the gnocchi sausage bake. Enjoy!

Butternut Squash Alfredo

Hey Sunny Siders, today I’m sharing one of my absolute favorite fall recipes! I look forward to making this every single year. This recipe is adapted from the Plant Based RD, so if you’re looking for a vegan/dairy free iteration of this recipe check out her creamy butternut squash pasta recipe!

Ingredients:

1 whole butternut squash

1 medium red onion

1 head of garlic

10 fresh sage leaves

2 T olive oil

1 package of pasta

6 T butter

1 1/2 C heavy cream

1 T lemon juice

1 1/2 C parmesan cheese

pinch of nutmeg

pinch of white pepper (can substitute for regular pepper)

Directions

Pre-heat oven to 425°F. Peel and cut butternut squash into cubes. Dice onion into chunks. Roll up sage and chop Finley. Cut the top of the garlic head off, and place into oven safe baking dish along with squash, onion and sage. Drizzle everything with olive oil and sprinkle with salt and pepper. Place in over and roast for 35-45 minutes until squash is fork tender.

Boil pasta water and cook according to package directions.

In a saucepan, melt butter and cream together on low heat (2-3). Add in lemon juice and half of the parmesan, lowering heat. Add pinch of nutmeg and white pepper before adding in the remaining parmesan cheese until desired consistency is reached.

When squash is finished roasting, remove garlic head and squeeze out roasted garlic into the baking dish. Mix it around before adding in pasta and alfredo sauce.

Top with more parmesan cheese if you’d like and enjoy!

Garlic-Ginger Chicken with Green Beans, Peppers, and Peanuts

Ingredients:

• 1 1/4 C Rice


• 3 C Chicken Stock


• 1 1/2 lb Chicken Breast (cubed)


• 2 T Dry Sherry


• 2 T Liquid Aminos


• 16 oz Green Beans


• 1 Large Bell Pepper, Sliced


• 1 Large Onion, Sliced


• 4 Cloves Garlic, Chopped


• 2 T Fresh Ginger, Grated


• 1/2 C Hoisin Sauce


• 1 T Sesame Oil


• 1/2 C Peanuts, Chopped

Directions:

1) In a Medium Saucepan heat 1 T of peanut oil on medium heat. Add rice to saucepan and stir until toasted (about 2 minutes). Add in 2 C of Stock and bring to a boil. Reduce the heat to low and cover, cooking rice until tender (about 18 minutes). When finished, fluff rice with a fork.

2) While Rice is cooking, in a large nonstick skill add 2 T of peanut oil on high heat. Add in the chicken and cook unit evenly browned on both sides (about 5 minutes). Then, add in the Sherry and Tamari, cooking until liquid evaporates (about a minute). Transfer chicken to a plate.

3) Add 1 T of peanut oil on high heat, then add the green beans, bell pepper, and onion to the skillet. Cook until vegetables begin to soften (about 3 minutes), adding in garlic and ginger afterwards. Once garlic and ginger are fragrant (about a minute), add hoisin sauce, sesame oil, and 1/2 C of stock. Cook until the liquid reduces to a sauce-like consistency (about 2 minutes). Then, add chicken back into skillet and season with salt and pepper to taste.

4) Top dish with peanuts and serve over rice.

5) Enjoy!

Limited Edition Iced Gingerbread One Bar Review!

Hello foodies, and welcome to another Foodie Friday! Today I’m going to be sharing my thoughts on the Iced Gingerbread One Bar.

Iced Gingerbread One Bar

Nutritional Information:

• 230 Calories

• 9g fat

• 23g carbohydrate

• 9g dietary fiber

• 1g sugar

• 20g protein

Verdict: 8/10. I really enjoyed the crushed almonds on top, it added a nice texture to the bar. The overall flavor was pretty good, but I didn’t taste a whole lot of ginger. Overall, I’d you are looking to get into the spirit of the season I’d give this bar a try!

I Tried the Highest Quality of Beef in the World

Hello friends, and welcome to another Foodie Friday! Today, I’m going to tell you about the most fantastic fine dining experience I’ve ever had.

For my brothers birthday this year he wanted to go to a fancy restaurant that he found called Benny’s Chophouse. We went and it was truly an amazing experience I’ll never forget. We drove to the restaurant and had a nice city view from our table. I had a Power Salad with kale, romaine, brussels sprouts, red quinoa, edamame, apple, gouda, almond slivers, and a honey mustard vinaigrette for my appetizer. It was so light and refreshing, I loved every bite. For dinner, I had a Japanese Black Grade A5 Miyazaki Skirt Steak. It was so tender and delicious. The sauce it came with was bursting with flavor and paired nicely with my side order of asparagus. Since it was my brothers birthday, he got a very special steak. Benny’s Chophouse is one of 6 restaurants that is certified to carry Japanese Black Grade A5 Tajik Kobe Filet. It is the highest grade of meat in the entire world and is the only “true” Kobe beef. The steak was so tender, it could be cut with a fork, no wonder it costed $249.99! It was truly worth the experience to get to try this cut of meat, it was so tender and delicious I have never tasted anything like it before. To end the night, we ordered desserts. I got their Chocolate Layer Cake, my mom got Carrot Cake, and my dad got Banana Cream Pie. The portions were enormous! My cake had fudge instead of frosting in between layers! It was the most moist and decadent cake I have ever had and I savored every bite. The Carrot Cake and Banana Cream Pie were also delicious, they both weren’t too sweet and had a nice lightness. Overall, we had a truly wonderful experience at Benny’s Chophouse celebrating my brother birthday. I am so glad that I got to experience a meal time this, it truly was unforgettable.
