Blogmas Day 7: The Best Chocolate Chip Cookie Recipe I’ve Ever Had

Hello Sunny Siders, happy Blogmas day 7! Today, I am sharing the BEST chocolate chip cookies recipe I’ve ever tried making and I want you all to be able to experience the magic of these cookies.

These are brown butter chocolate chip cookies that I have adapted slightly from a recipe @/samanttha_chen shared on instagram!

Ingredients:

1 C unsalted butter

2.5 C all purpose flour

1 T cornstarch

1 tsp baking soda

1 tsp salt

1 C brown sugar

3/4 C white sugar

1 egg

1 egg yolk

1 T heavy cream

1 T vanilla extract

Mix of dark chocolate and semi sweet chocolate chips/chunks to your liking

Optional: toasted crushed walnuts or pecans to your liking

Directions:

Preheat the oven to 350 degrees Fahrenheit.

Take the cup of butter and heat in a saucepan on medium/low heat until the butter turns golden and brown (it should smell nice and toasted)

Remove butter from saucepan and chill in the freezer for 10 minutes to cool down

Combine flour, cornstarch, baking soda and salt together in a bowl and set aside.

Beat together butter and both sugars until light and fluffy.

Add in the egg, egg yolk, heavy cream, and vanilla.

Slowly add dry mixture to the wet mixture and mix, then fold in chocolate and nuts.

Bake cookies for 12-14 minutes to desired doneness.

Should make about 2 dozen cookies.

Banana Bread Protein Muffins

Hey Sunny Siders, it’s been so long since I’ve shared a recipe with you guys, but today we are changing that and I’m technically sharing two recipes in one!

As one does when they have a surplus of overly ripe bananas they make banana bread! I used one base recipe and altered the fixings based on what I wanted. Today I’ll be sharing cinnamon walnut banana bread muffins and dark chocolate chip banana bread muffins.

Banana Bread Muffins Batter

5 ripe bananas

2 C All purpose flour

3/4 C vanilla protein powder

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1/4 C granulated sugar

1/4 C brown sugar

1/4 C unsalted butter, melted

2 large eggs

1 tsp vanilla paste (vanilla extract works too)

1/2 C sour cream

Cinnamon Walnut Banana Bread Muffin

1/2 C chopped walnuts

Oatmeal Topping

1/4 C rolled oats

1 T sugar

1 T cinnamon

Dark Chocolate Chip Banana Bread Muffins

1/2 C dark chocolate chips

Directions

Preheat oven to 350°F

Whisk together all the dry ingredients (flour, baking soda, baking powder, protein powder, salt, cinnamon)

In a separate bowl combine bananas, eggs, both sugars, vanilla paste, butter, and sour cream until homogenized.

Slowly add dry ingredients to wet ingredients until fully incorporated.

At this step either fold in walnuts or chocolate chips.

Line muffin tray with cupcake liners and evenly scoop batter into trays.

For cinnamon banana bread muffins, mix together sugar, cinnamon, and oats. Then sprinkle overtop the muffins.

Bake muffins at 350°F for 25-30 minutes or until a toothpick comes out clean.

Wait to cooldown and then enjoy!

Making the Easiest Christmas Cookie Bars (Blogmas Day 12)

Hey Sunny Siders, today I’m sharing a holiday recipe that is so simple even novice bakers can make them. This recipe is a basic almond shortbread cookie with sprinkled topped with cream cheese frosting.

I wanted to make cookies while visiting my boyfriend and he lacked all the following basic baking tools: mixing bowls, measuring spoons, measuring cups, and a hand mixer. Still, we were able to make these cookie bars substituting in a rice cooker bowl for the mixing bowl and using a liquid measuring cup for all ingredients. We mixed everything with a spatula or by hand and they still turned out delicious, so you really can make these with next to no baking equipment.

Cookie Ingredients

1/2 C butter (softened)

1 C sugar

1 large egg

1 tsp vanilla extract

1/8 tsp almond extract

1/4 tsp salt

2 C flour

1 tsp baking powder

1/4 C holiday sprinkles (we didn’t have any so feel free to use any sprinkles you like)

Frosting Ingredients

1/2 C butter softened

8 oz cream cheese softened

1 tsp vanilla extract

1/4 tsp salt

1.5 C powdered sugar

Directions

Preheat oven to 325°F. In a mixing bowl, combine butter, sugar, and egg until homogeneous. Add salt, almond extract, and vanilla extract and stir to incorporate. Slowly add in 2 C flour and baking powder until dough is full mixed. Once dough is mixed, then add in sprinkles. Place dough into a parchment lined pan and press out until even and smooth. Bake for 15-20 mins until dough is golden brown but still soft. Allow to cool completely.

While cookie bars are cooling, add the softened cream cheese, butter, vanilla extract, and salt to a bowl and mix together. Once combined, slowly add in 1.5 C of powdered sugar until a thick, smooth frosting is formed.

When cookie bars are cooled, spread frosting overtop and add finish off with sprinkles. Cut into bars and enjoy.

My Go To Snack Recipe Right Now: Chocolate Peanut Butter Protein Bars

Hey Sunny Siders, today I’m sharing a recipe that I have had on repeat for about the past month. I genuinely cannot stop eating these delightful chocolate peanut butter oatmeal protein bars. They are the perfect little pick me up packed with protein. I am not kidding when I say I snack on these anytime of day: breakfast, lunch, and dessert I’m eating these bars they are just that good. This recipe is adapted from Taryn Shank, so feel free to check out the original recipe here.

Ingredients

Base:

• 1 C Rolled Oats

• 1 C Creamy Peanut Butter

• 2 Scoops Vanilla Protein Powder

• 1/2 C Maple Syrup

• 1 tsp Vanilla Extract

• 1 Pinch of Salt

Topping:

• 1 C Semi-Sweet Chocolate Chips

• 1 T Coconut Oil

• Salt to garnish

Directions:

1. Add oats, peanut butter, protein powder, maple syrup, vanilla extract, and salt to a bowl. Stir to combine (if too runny, add more oats until a nice dough forms).

2. Line a 9×9 inch baking pan with tin foil.

3. pour dough into pan and wet hands with water to help with spreading dough flat.

4. Add chocolate chips and coconut oil to a bowl and microwave in 30 second intervals until smooth.

5. Pour chocolate over oat base and smooth with spatula.

6. Sprinkle salt overtop and place in freezer for at least 1-2 hours to set.

7. Remove bars and cut into desired size pieces before storing in an airtight container in the freezer.

8. Enjoy!

Some Random Things I am Loving Lately (Part 1)

Hello Sunny Siders, I’ve covered a lot of heavy topics lately and thought it was time for something more lighthearted and fun! For the next few blog installments I will be sharing some random goodies that I’ve been obsessed with lately. These items range from food to shower preferences to social media influencers. So strap in for this hodgepodge of little things that have made life extra fun lately. This week, we will start with my favorite food and drink items.

Food and Drink Items

• RX Vanilla Almond Nut Butter

I recently tried this as a recommendation from my cousins, and all I have to say is wow! It has the texture of frosting, and my favorite way to eat this is straight out of the jar with a spoon.

• Mint Chocolate Chip NuGo Bars

If you like protein bars, but hate the texture then NuGo bars are the one for you! My current favorite flavor is the Mint Chocolate Chip, I am not kidding when I say it tastes like a Thin Mint.

• Planet Oat Sweet Cream Coffee Creamer

As a non-dairy drinker, I’m always looking for dairy free alternatives to items I love. In comes, Planet Oat coffee creamer. This creamer has such great flavor with no weird aftertaste. I personally have been loving the Sweet Cream flavor in my iced lattes.

• Chobani Extra Creamy Oat Milk

Another dairy free favorite of mine has been Chobani Extra Creamy Oat Milk. I love this stuff because it is the only dairy free milk I’ve found that has a similar viscosity to milk. It makes for perfect bowls of cereal in the morning (or night)!

• Sourdough Bread

Sourdough is hands down the best bread on the planet! Need I say more?

• Pop Corners

Pop Corners are the perfect salty, savory snack. I love grabbing one of these when I’m on the go for a quick re-fuel moment. My favorite flavor is either kettle corn or white cheddar!

• Salt and Pepper Pistachios

If you’ve never tried salt and pepper pistachios then you are missing out! With how delicious these guys are, I seriously could eat an entire bag in one sitting if I’m not careful

• Crazy Richard’s Peanut Butter

If you’ve followed along with me for some time you’d know I’m a huge lover of Crazy Richard’s Peanut Butter. I love that the only ingredient in Crazy Richard’s Peanut Butter is peanuts. Plus, it’s got the perfect texture for drizzling over some pancakes or for making apple nachos!

• Slate Milk

Slate is one of my favorite grab and go protein shakes! Both the milk and dark chocolate flavors are so yummy. I love drinking one of these in the morning before a workout or school.

• Kodiak Cakes

If you love pancakes and are looking for a little extra protein in your diet, I highly recommend Kodiak Cakes! I personally love making Kodiak Cakes every Sunday, it’s become a staple in my house. They also make frozen waffles which are heavenly.

• Pears

I have been on a pear kick lately. Something about a ripe and juicy pear is just hitting different lately.

• Shirley Temple with Lime

Don’t knock it until you try it! If you like sprite, grenadine, and lime juice then this is the combination for you. I personally find this to be the drink of the summer!

• Pamela’s Gluten Free Honey Grahams

I recently found out I have a sensitivity to gluten, but I love graham crackers. In walks Pamela’s Gluten Free Honey Grahams and all my troubles have melted away. These are the only gluten free graham crackers I’ve found that taste like the regular ones. They actually remind me a lot of Scooby Snacks if you’ve ever had those before.

• Strawberries and Whipped Cream

This had been my tride and true dessert of the summer. Something about some juicy strawberry’s with some light, fluffy whipped cream is a magical combination.

• Land O Lakes Whipped Cream

Since I’ve been eating lots of strawberries and whipped cream, I’ve obviously been on the hunt for the best whipped cream. Spoiler alert: it’s not Reddi Whip! Personally, my favorite right now is Land O Lakes. It has such a creamy texture and it isn’t super sweet. It’s almost like eating the homemade stuff.

Reiner Cherries

Another staple for the summer has been Reiner cherries. They are seriously addictive so be careful!

• Fairlife Strawberry Nutrition Plan

If you’re looking for a strawberry milk that isn’t mostly sugar, then I encourage you to try the Fairlife Nutrition Plan in Strawberry flavor. This stuff literally tastes like Nestle Strawberry milk, but with 30 grams of protein!

Dairy Free English Toffee

Hey Sunny Siders, today I’m sharing one of my absolute favorite holiday treats turned dairy free. This English Toffee recipe is so easy and super delicious!

Ingredients:

• 1 C Margarine

• 1 C Sugar

• 1/2 tsp Vanilla Extract

• 1/4 C Water

• 1/2 C Chopped Almonds

• 1/2 C Slivered Almonds

• 1 C Dairy Free Mini Chocolate Chips

Directions:

1) Grease 9×13 inch Pan

2) In a deep pot on high heat kept margarine, add in sugar, water, and vanilla

3) Constantly stir mixture until it reaches 300 degrees Fahrenheit

4) Remove from head and add in slivered almonds

5) Transfer mixture to greased pan and sprinkle chocolate chips over top, let sit for a minute

6) Spread out chocolate mixture overtop and sprinkle with slivered almonds

7) Let cool completely before breaking into pieces

Dairy Free Dark Chocolate Cranberry Shortbread Cookies

Hey Sunny Siders, today I’m sharing this delicious shortbread cookie recipe that is perfect for the holiday season.

Ingredients:

• 1 C Margarine
• 1/2 C Sugar
• 1/2 tsp Almond Extract
• 2 C Flour
• 1/4 C Cornstarch
• 1/2 C Chopped Dried Cranberries
• 1/4 C Mini Dairy Free Chocolate Chips

Chocolate Drizzle:

• Coconut Oil and Dairy Free Dark Chocolate Chips

Directions:

1) Mix Margarine, sugar, and almond extract
2) Gradually Fold in Flour and Cornstarch
3) Mix in cranberries and chocolate by hand
4) Form into balls, or roll and use cookie cutters to shape dough
5) Bake at 300 Degrees Fahrenheit for 20-30 mins
6) Once cooled, drizzle chocolate overtop

Dairy Free Peanut Butter Blossoms

Hey Sunny Siders, I’m back with a spin of my favorite holiday cookie recipe. These dairy free peanut butter blossoms are sure to knock your socks off.

Ingredients:

• 1/2 C Margarine

• 1/2 C Crunchy Peanut Butter (Crazy Richard’s Peanut Butter)

• 1/2 C Swerve Granular Sugar replacement

• 1/2 C Coconut Sugar

• 1 Egg

• 1 tsp Vanilla

• 1 & 3/4 C Flour

• 1 tsp Baking Soda

• 1/2 tsp Salt

• Dairy Free Chocolate Chunks

Directions:

1) Preheat oven to 350 degrees Fahrenheit

2) Cream margarine, peanut butter, and both sugars

3) Add in egg and vanilla until we’ll combined

4) Fold in flour, baking soda, and salt

5) Roll into balls and coat in sugar

6) Bake for 6 minutes before topping with dairy free chocolate chips and baking for another 3-5 minutes

Snickers Baked Goatmeal

Hey Sunny Siders, I’m back again with another decadent baked goatmeal recipe. This one is inspired by my favorite Candy bar, Snickers!

Ingredients:

• 1/2 C Rolled Oats

• 1/2 Scoop Chocolate Protein Powder

• 1/2 Scoop Caramel Protein Powder

• 1/2 Medium Frozen Banana

• 2/3 C Almond Milk

• 1 tsp Vanilla Extract

• 1 tsp Baking Powder

• 2 T Peanuts

• Pinch of Salt

Directions:

1) Preheat oven to 400 degrees Fahrenheit

2) To a blender, add oats, protein powders, almond milk, banana, vanilla extract, baking powder, and salt

3) Place mixture into a baking safe dish and fold in peanuts

4) Bake for 22 minutes

5) Enjoy!

Brownie Batter Baked Goatmeal

Hey Sunny Siders, I’m finally back with another recipe and this one is sure to knock your socks off. This brownie batter baked oats is like eating dessert for breakfast and I am LIVING for it!

Ingredients:

• 1/2 C Rolled Oats
• 1 Scoop Chocolate Protein Powder
• 1/2 Medium Frozen Banana
• 2 tsp Cocoa Powder
• 2/3 C Almond Milk
• 1 tsp Baking Powder
• 1 tsp Vanilla Extract
• Pinch of Salt
• 1 T dairy free chocolate chips
• 1 T Peanut Butter (Crazy Richard’s)

Directions:

1) Preheat oven to 400 degrees Fahrenheit

2) To a blender, add oats, protein powder, banana, cocoa powder, almond milk, baking powder, vanilla extract, and salt.

3) Blend until ingredients form a thick batter like liquid

4) Pour mixture into an oven safe dish (ramekin)

5) Fold in chocolate chips

6) Bake for 22 minutes until oats rise and become golden on outside (inside will be runny and molten)

7) Let cool and enjoy!
