Homemade Pumpkin Cream Cold Brew

Hey Sunny Siders, today I’m sharing my favorite fall coffee recipe! I’ve always loved the Starbucks Pumpkin Cream Cold Brew, but felt like I could make it myself and save some money! I’ve been playing around and this is currently my favorite way to have my favorite fall coffee on a budget!

Ingredients

0.45 g coffee grounds

1 tsp pumpkin pie spice

1 C heavy whipping cream

1/2 T pumpkin pureee

1 T vanilla syrup + 1 tsp of pumpkin pie spice

Directions

Add 0.45 g coffee grounds and 1 tsp of pumpkin pie spice to 1 cup of water. Stir and let sit in fridge for at least 8 hours (overnight preferred)

Add heavy whipping cream, pumpkin purée, vanilla syrup, and pumpkin pie spice to a mason jar. Shake thoroughly until all ingredients are combined and cream becomes frothy and viscous.

Add cold brew coffee to a glass and top with desired amount of foam.

Sprinkle with more pumpkin pie spice and enjoy!

Pumpkin Snickerdoodle Baked Goatmeal

Ingredients:

• 1/2 C Rolled Oats

• 1/4 C Pumpkin Purée

• 1 Scoop Vanilla Protein Powder

• 2/3 C Almond Milk

• 2 tsp Pumpkin Spice

• 1 tsp Cinnamon

• 1 tsp Baking Powder

• 1 tsp Vanilla Extract

• 1 tsp Maple Syrup

• Pinch of Salt

• 2 T Almond Butter (Crazy Richard’s)

Directions:

1) Preheat Oven to 400 Degrees Fahrenheit

2) Add oats, protein powder, pumpkin purée, almond milk, pumpkin spice, cinnamon, vanilla extract, baking powder, maple syrup, and salt to belender

3) Blend until a thick batter forms

4) Place mixture into a bake safe dish (ramekin) and bake for 22 minutes

5) Top with Almond Butter and Enjoy!

Pumpkin Pie Goatmeal

Hey Sunny Siders, and welcome to another Foodie Friday! Today I’m bringing you the perfect fall oatmeal recipe.

Ingredients:

• 1/4 C Steel Cut Oats

• 1 Serving Vanilla Protein Powder

• 2 T Pumpkin Purée

• 2 T Almond Butter (Crazy Richard’s)

• 1 tsp Pumpkin Pie Spice

• 2 T Dairy Free Vanilla Cinnamon Yogurt

• 1 T Chopped Pecans or Pumpkin Spice Granola

Directions:

1) Cook oats according to package instructions with pumpkin pie spice.

2) Once cooked, add pumpkin purée and vanilla protein, adding water or milk to achieve desired thickness.

3) Top oats with cinnamon vanilla yogurt and more pumpkin pie spice.

4) Swirl together and enjoy!

Pumpkin Spice Cake with Yogurt Frosting

Hey Sunny Siders, and welcome to another Foodie Friday! Today I have the most moist and decadent pumpkin cake recipe for you all! It is truly a show stopper.

Ingredients:

• 1 C Peanut Butter

• 1/3 C Pumpkin Purée

• 1/4 C Maple Syrup

• 1 Egg, beaten

• 1 tsp Vanilla Extract

• 2 tsp Pumpkin Pie Spice

• 1/2 tsp Baking Soda

• 1/2 tsp Salt

Directions:

1. Preheat oven to 350 Degrees Fahrenheit.

2. In a bowl, whisk egg until beaten.

3. Add peanut butter, maple syrup, pumpkin purée, and vanilla extract to bowl with egg and mix together thoroughly.

4. Add pumpkin pie spice, baking soda, and salt to wet ingredients and mix until thoroughly combined.

5. Grease an 8×8 baking dish with non-stick cooking spray and pour batter into dish.

6. Wack dish on counter to level batter and remove bubbles.

7. Bake for 20 minutes or until a toothpick comes out clean.

8. Wait for cake to cool to room temperature before topping with lactose free vanilla yogurt mixed with additional pumpkin pie spice.

9. Slice bars and enjoy!
